"Vòi" is the name of a vineyard in the municipal territory of Calliano in a slightly sloping place that is the sunniest part of Calliano if you’re coming from Besenello; sandy and gravelly soil, with high level of limestone: the ideal place for the growing of quality white grapes.
"Vòi" is a blend of Chardonnay and Pinot Bianco, obtained with cold maceration of the grapes for 24 hours before the start of the fermentation.
Fermentation take place without skins (removed by a slight pressing) at low temperatures in order to guarantee a long aromatic persistence.
It is then refined in steel on its lees for about 6 months and then bottled.
The colour is straw yellow with greenish tints and the perfume is intense and fruity with typical notes of peach and banana. Dry, full bodied and well balanced on the palate.
A pleasant aperitif, it well completes to fish or shellfish, lean starters and delicate soups.
It should be served at an ideal temperature of about 10°C.
